Quick Ideas for Persimmons


I am asked about what to do with persimmons often and we do get quite a few from Farmer Steve so I thought I could put together a short list of ideas, most of which are quick and don't require cooking or baking.  If anyone has more ideas, feel free to leave a comment on this post.

Most of the time you will need to prepare the fruit in this way:

Cut around the top leaf bit like you would on a large tomato. Peel using a paring knife and quarter or chop fruit.
(The skin is edible but most of the time I peel the fruit.)

Yogurt and Persimmon

3/4 cup plain yogurt (lowfat or whole milk)
2 persimmons prepared as directed above
small handful of oats
1/4 cup walnuts
1/4 tsp cinnamon
2 tbs maple syrup

Mix everything together and enjoy.
I like this for breakfast but it could work for a snack or after dinner.

 Chop peeled persimmons and squeeze lime juice over the fruit for a bit of a different taste.

Or sprinkle with cinnamon and serve as a fruit salad.

Sliced banana and sliced persimmon make a nice fruit salad combo.

Add sliced persimmon to any salad which calls for apple or pear.

Replace mango with persimmon in any mango salsa recipe for a fall version of a summer classic.

Add to your smoothies, I think they go very nicely with banana.
