Using items from our Stehly CSA box this week, I put together this quick after a little bit of homework. Early this morning, while children slept I threw the beets with a bit of water into a baking dish, covered it with foil and baked them at 350 for about an hour. Once they were done through almost, I set them on the counter, covered with foil to continue steaming and cooling. I rinsed the red romaine and put it in the fridge as well.
Now it is lunch time, so I pull out the romaine and chop. Peel a beet and chop it as well. Crumble some goat cheese on top of the lettuce and beet. Add a peeled mandarin, some raw walnuts and some balsamic dressing. Lunch is done.
