It has been on my daughter's agenda for quite some time to make the fruit jellies she found in The River Cottage Family Cookbook. For some reason once we actually had the gelatin required, the time has eluded us. But just this afternoon, while one sister was away at a friend's and another was napping, we mixed up our own version which turned out quite nice, and altogether lovely compared to the manufactured taste of boxed gelatin treats. I don't see any reason to make any other than we made today. Now, if we only had a fancy mold.
Orange Passion Fruit Jellies
serves 8
6-8 juicy oranges
4-6 passion fruit
1/2 cup boiling water
50g powdered sugar
2 packets Knox brand gelatin, or similar
1. Squeeze the oranges using an electric juicer or old-fashioned reamer. Pour into a pitcher.
2. Cut passionfruit in half and scrape seeds into strainer. Push as much juice as possible from the seeds over a cup or jar. It may not look like much, but the flavor is strong and will shine through. Pour into pitcher of orange juice and mix.
3. Measure 600ml of juice mix and add to a large bowl. Whisk in the powdered sugar until it dissolves.
4. Fill a mug with 1/2 cup of just boiled water. Sprinkle gelatin packs, one at a time, stirring the whole time until gelatin dissolves completely in water. (You can pour the gelatin through a strainer when adding to bowl of juice if the liquid seems lumpy.) Pour gelatin mixture into juice bowl and stir until blended.
5. Pour into moulds if you have them or a medium sized bowl. Cover and put in the refrigerator and chill until firm. 2-4 hours.
6. Unmould or scoop and enjoy!
