Plum Upside Down Cake



Here is a quick cake to use with those plums or apples we are getting in the boxes right now. 
Alternatively, you can substitute apples, blueberries, raspberries, or pears for the plums, eliminating the first step of preparing the pan. Simply spoon the batter into a buttered pan, sprinkle the fruit on top of the batter and bake for 30 minutes. It makes a great dessert, tea cake or serve it with a brunch as well. My girls love this one!


Plum Upside Down Cake

Set oven to 350.

For pan:
2 Tbs butter
1/3 cup brown sugar
4 or 5 plums, cut into eighths

For batter:
1 cup all purpose flour
1/3 cup whole wheat or spelt flour
1/3 cup sugar
2 tsp baking powder
2/3 cup milk
1/4 cup butter, softened
1 egg
1 tsp vanilla

Prepare pan:
Melt butter in 8x8 baking pan or 9-inch cake pan. Stir in brown sugar and 1 tsp water. Arrange plums evenly in pan. 
Prepare batter like so. Combine flour, sugar, and baking powder in a bowl. Add milk, butter, egg, and vanilla. Beat with electric mixer on low until combined. Beat on medium for one more minute. 
Spoon batter evenly into pan. Bake in 350 degree oven for 30-35 minutes or until a tester inserted in the center, comes out clean. Cool on a wire rack for 5 minutes. Loosen sides and invert onto a plate. Serve warm. Serves 8.
