Lemonade Pops
makes 6-10
1 cup freshly squeezed lemon juice
1 batch simple syrup
2 cups water
For simple syrup, combine 2/3 cup sugar, 1/2 cup water and 4 2-inch strips of lemon rind. Bring to a boil, remove from heat and cool.
Once syrup is cool, combine lemon juice, syrup and water. You want the mixture to taste a bit more concentrated than you would normally drink, this helps with the texture of the pop.
Pour into popsicle molds and freeze until solid, about 3-4 hours.
If you have a hard time removing the popsicles, dip them in a glass of water for a minute or two. This will help to release the pop. Enjoy!
Note: Need popsicle molds? Check crate and barrel or online. Occasionally you see them in the grocery store as well around summer time. Or use dixie cups or the like with popsicle sticks or plastic spoons.
