My kids call this "sticky chicken", and even Emma, a self-proclaimed chicken hater, eats it. This recipe is taken directly from Apples for Jam, by Tessa Kiros. It takes a lot of time, but is really quite simple, perfect for a weekend dinner or a lazy summer afternoon.
Chicken Drumsticks with Orange Tomato Glaze
serves 6
1/2 cup firmly packed light brown sugar
1 1/2 cups freshly squeezed orange juice(about four valencia oranges)
3/4 cups canned tomato sauce or crushed tomatoes
1 1/2 tbs soy sauce
1 1/2 tbs worcestershire sauce (or stone ground mustard)
10-12 chicken drumsticks or 6 drumsticks and 6 wings
Preheat oven to 325F. Put the sugar, orange juice, tomato sauce, soy sauce, and worcestershire sauce in a pan, and bring to a boil, stirring to dissolve the sugar. Simmer for 5 minutes.
Spread chicken in a roasting pan just large enough to fit them in a single layer and pour sauce over the top. Bake for 2-2 1/2 hours, basting and turning the pieces over every now and then, until chicken is crispy and sticky and the sauce is a thick sticky glaze. Serve warm, or a room temperature.
