Kale Slaw

I just threw this together tonight. Between our community garden plot and Farmer Steve, we have many greens to get through. I found a great recipe for kale salad which I have been using as a base for salad these winter days of plentiful greens. They are so healthy and an easy way to get supercharged with vitamins and minerals.

Kale Slaw

For salad:
1 bunch of kale, any type with tough stems removed
4 carrots scrubbed well
2-4 green onions
4 baby turnips or other root veg, such as radish, baby rutabaga

For dressing:
3 Tbs tangerine juice or other orange type citrus
3 Tbs extra virgin olive oil
2 pinches of Diamond Kosher salt or other flake salt


Using a food processor, grate carrots, onions and turnips.
Pile up kale and slice into ribbons and then chop until small.  Add kale and grated veg to a bowl.

Measure oil, juice and salt into a jar with tight fitting lid. Shake vigorously.
Pour dressing over salad, toss, and let sit 15-30 min, refrigerated.
