Beet Salad

Here is a fast, simple recipe from Kendra, another co-op member.

Beet Slaw

3 fresh beets, peeled and grated
1 Tbsp sherry vinegar
1 Tbsp red wine vinegar
2 Tsp dijon mustard
5 Tbsp safflower oil
1 pressed clove of garlic
 
Wisk all ingrediants except beets together and then add beets.  Salt and pepper to taste.
 
The original recipe called for 2 Tbsp of sherry vinegar, but it is strong so I adjusted.  And it did not have garlic, I added.  Anyway, delicious way to use something that I don't regularly eat.
