Lemon Parmesan Vinaigrette



Lemon Parmesan Vinaigrette
1/4 cup lemon juice
1 tbs dijon or stone ground mustard
1/4 tsp salt
1/8 tsp freshly ground pepper
pinch of sugar
1/4 cup grated parmesan cheese
3/4 cup extra virgin olive oil

Add everything to a mason jar and shake vigorously until creamy.
If you don't have a jar, you can add everything except the oil to a bowl. Whisk well, then continue whisking while drizzling in the oil.



This is one of those dressings that goes well with most anything. I made it up to go on a chopped salad I named Spoon Salad.  The salad is just a bit of everything from our produce box which I like to make on delivery day.


Spoon Salad

Here is what I put in the salad:

one small zucchini
half small cucmber
2 small tomatoes
5-6 radishes
10 green beans
green Spanish olives to taste
a few spinach leaves
feta cheese to taste

Chop everything to small bite sized pieces. Throw every thing into a bowl. Break up cheese over salad. Dress salad with vinaigrette.
